Celebrate Australia Day with a refreshing and vibrant fruity punch featuring local flavors.
Ingredients:
  • 1/2 honeydew melon, seeds removed
  • 3 Australian Breakfast tea bags (or use your favourite black tea)
  • 1L (4 cups) pineapple juice
  • 750ml ginger ale
  • 500ml rum
  • 4 mint sprigs, plus extra to serve
  • 4 passionfruit, plus extra to serve
  • Pineapple wedges, to serve
Instructions:
  • Using a melon baller or small ice cream scoop, form melon balls and transfer them to a plastic container. Freeze for 1 hour.
  • Combine the tea bags and 3 cups (750ml) boiling water in a large jug. Mix in the sugar and let it steep for 10 minutes. Remove and discard the tea bags, then let the tea cool completely.
  • Combine pineapple juice, ginger ale, rum (if desired), and mint sprigs into the cooled tea. Mix in the passionfruit pulp and garnish with ice cubes.
  • For a beautiful presentation, add ice cubes and frozen melon balls to glasses, then pour in the punch. Top with pineapple wedges, extra passionfruit pulp, and fresh mint sprigs.
