Delightful lemon-poppy seed pancakes, perfect for a special morning treat.
Ingredients:
  • 0.75 cup milk
  • 1 tablespoon vinegar
  • 2 tablespoons butter, melted
  • 0.5 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon poppy seeds
  • 1 teaspoon lemon zest
Instructions:
  • Combine the milk, vinegar, and lemon juice in a bowl and allow it to curdle for 10 minutes. Then, whisk in the egg, butter, and vanilla extract.
  • Combine flour, sugar, baking powder, baking soda, salt, poppy seeds, and lemon zest in a bowl. Pour in the milk mixture and whisk until batter is smooth.
  • Preheat skillet over medium heat, then lightly coat with cooking spray. Pour 1/4 cup of batter per pancake onto skillet. Cook until bubbles form on the surface, approximately 2 minutes. Flip pancakes with spatula and cook the other side until golden brown, about 2 minutes more.
