1 x 100g pkt original fried noodles (Chang's brand)
40g (1/4 cup) coarsely chopped toastedpeanuts
Fresh coriander leaves, to serve
Instructions:
1. Preheat a non-stick frying pan over high heat. Cook the pork, stirring, for 5 minutes until it changes color.
2. Add ginger and cook for 2 minutes until fragrant.
3. Stir in water chestnuts, soy sauce, fish sauce, lime juice, and sesame oil. Cook for 5 minutes until most of the liquid is absorbed.
4. Allow it to cool for 5 minutes before serving.
Arrange the lettuce on a platter, then layer with tomato, cucumber, onion, and pork. Finish with a sprinkle of noodles, peanuts, and fresh coriander before serving.
