Sung choi bao salad

A show-stopping BBQ side salad that's quick and delicious.
Ingredients:
  • 500g pork mince
  • 20.00 ml finely grated fresh ginger
  • 1 x 200g can water chestnuts, drained, finely chopped
  • 42.00 gm soy sauce
  • 21.00 gm fresh lime juice
  • 20.00 ml sesame oil
  • 1 iceberg lettuce, leaves separated, finely shredded
  • 2 ripe tomatoes, cut into thin wedges
  • 2 Lebanese cucumbers, thinly sliced diagonally
  • 1 red onion, halved, cut into thin wedges
  • 1 x 100g pkt original fried noodles (Chang's brand)
  • 40g (1/4 cup) coarsely chopped toasted peanuts
  • Fresh coriander leaves, to serve
Instructions:
  • 1. Preheat a non-stick frying pan over high heat. Cook the pork, stirring, for 5 minutes until it changes color. 2. Add ginger and cook for 2 minutes until fragrant. 3. Stir in water chestnuts, soy sauce, fish sauce, lime juice, and sesame oil. Cook for 5 minutes until most of the liquid is absorbed. 4. Allow it to cool for 5 minutes before serving.
  • Arrange the lettuce on a platter, then layer with tomato, cucumber, onion, and pork. Finish with a sprinkle of noodles, peanuts, and fresh coriander before serving.
