Get creative with carrots! Peel them into colorful ribbons for a vibrant salad.
Ingredients:
  • 3 peeled carrots, peeled into ribbons
  • 2 large celery sticks, thinly sliced diagonally
  • 2 spring onions (shallots), thinly sliced diagonally
  • 82.50 ml fresh continental parsley leaves
  • 45g (1/4 cup) blanched almonds, toasted, coarsely chopped
  • 50g (1/4 cup) raisins
  • 18.20 gm extra virgin olive oil
  • 21.00 gm orange juice
  • 10.60 gm lemon juice
  • 7.20 gm honey
  • 5.90 gm Dijon mustard
Instructions:
  • Prepare the citrus dressing by mixing together oil, orange juice, lemon juice, honey, and mustard in a small bowl. Season with salt and pepper, then whisk until well combined.
  • Combine the carrot, celery, spring onion, parsley, almonds, and raisins in a large bowl. Drizzle with citrus dressing and toss together.
