Budget-friendly beef mince rissoles, perfect for quick weeknight meals. Freezer-friendly for easy prep and reheating.
Ingredients:
  • 650g beef mince
  • 1 small brown onion, grated
  • 2.40 gm celery salt
  • 22.20 gm tomato paste
  • 24.40 gm Worcestershire sauce
  • 312.50 ml fresh breadcrumbs
  • 1 egg, lightly beaten
  • 36.40 gm extra virgin olive oil
  • 4 slices crusty bread, to serve
  • 1 celery stalk
  • 2 small vine-ripened tomatoes, seeded, finely chopped
  • 1/4 small red onion, finely diced
  • 10.60 gm lime juice
  • 4.60 gm extra virgin olive oil
  • 5.20 gm Tabasco sauce (optional)
Instructions:
  • Combine mince, brown onion, garlic, celery salt, tomato paste, Worcestershire sauce, breadcrumbs, and egg in a bowl. Season generously with pepper, mix thoroughly. Form mixture into 12 rissoles, chill on a tray for 15 minutes.
  • Prepare Crunchy Salsa by finely dicing celery stalk and combining it with tomato, red onion, lime juice, oil, reserved celery leaves, and Tabasco sauce in a bowl. Season to taste.
  • 1. In a large frying pan, heat oil over medium-high heat. Cook rissoles in 2 batches, flipping once, until golden and cooked through (4-5 minutes per side). Serve with crunchy salsa and crusty bread.
