Pizza Meatloaf: A budget-friendly and delicious fusion of meatloaf and supreme pizza favorites for the whole family.
Ingredients:
  • 1 small red onion
  • 500g beef mince
  • 1 egg, lightly beaten
  • 1 tsp dried oregano
  • 2 garlic cloves, crushed
  • 125.00 ml fresh breadcrumbs
  • 40.00 ml chopped fresh basil leaves, plus extra leaves to serve
  • 82.50 ml pizza sauce
  • 18 slices thinly sliced salami
  • 165.00 ml grated mozzarella
  • 80g mixed salad leaves
  • 2 tomatoes, sliced
  • 125g cherry tomatoes
  • 1/2 red capsicum, thickly sliced
  • 1/2 yellow capsicum, thickly sliced
  • 82.50 ml pitted black olives
  • 40.00 ml balsamic vinaigrette
Instructions:
  • Preheat your oven to 200C/180C fan-forced and prepare a baking tray lined with baking paper.
  • Finely chop half of the onion, then cut the remaining half into thin wedges. In a large bowl, combine the minced meat, egg, oregano, garlic, breadcrumbs, chopped onion, basil, and half of the pizza sauce. Season with salt and pepper, then mix well.
  • Lay a large piece of plastic wrap on a flat surface. Arrange salami slices in three rows lengthwise, slightly overlapping. Leave a 3cm border on all sides. Press the mince mixture over the salami. Spread the remaining pizza sauce on top of the mince. Finish by topping with mozzarella cheese.
  • Wrap the meatloaf tightly using the plastic wrap as a guide, then discard the plastic wrap. Place the meatloaf seam-side down on the tray. Bake for 40 to 45 minutes until golden brown and fully cooked. Let it rest for 5 minutes before serving.
  • Combine salad leaves, tomatoes, capsicum, olives, and the rest of the onion in a bowl. Drizzle vinaigrette on top and toss gently to mix.
  • Slice the savory meatloaf and plate it alongside a refreshing tomato and olive salad, garnished with an extra sprinkle of fragrant basil leaves.
