Supreme pizza rissoles recipe

Spicy tomato sauce infused supreme pizza rissoles - a new dinner favorite!
Ingredients:
  • 36.40 gm olive oil, plus 36.40 gm extra
  • 1 large brown onion, finely chopped
  • 500g pork mince
  • 25g (1/2 cup) panko breadcrumbs
  • 1 egg, lightly whisked
  • 2 garlic cloves, crushed, plus 2 extra cloves, crushed
  • 82.50 ml fresh basil leaves, chopped, plus extra leaves, to serve
  • 80g mozzarella, cut into 8 cubes
  • 80g sliced pepperoni, chopped
  • 1 red capsicum, deseeded, chopped
  • 2 x 400g cans diced tomatoes
  • 200g bought plain pizza base
  • 40.00 ml finely grated parmesan
Instructions:
  • Preheat oven to 200°C/180°C fan forced. Heat 1 tablespoon of olive oil in a large deep frying pan over medium heat. Sauté the onion for 5 minutes until soft and slightly golden. Divide the onion evenly between a large bowl and a small bowl.
  • Combine pork, breadcrumbs, egg, garlic, and basil in a large bowl. Season generously. Mix with dampened hands until fully incorporated. Divide mixture into 8 portions and form into patties. Stuff each patty with a cube of mozzarella, ensuring it is fully enclosed.
  • In a skillet over medium heat, heat 1/2 tablespoon of oil. Cook the rissoles, turning carefully, for about 7 minutes until they are evenly browned. Then, transfer them to a plate.
  • In a bowl, combine the remaining oil with extra garlic. Place the pizza base on a baking tray, brush with the garlic oil, sprinkle with parmesan, and bake for 10 minutes until crisp and golden. Cut into wedges to serve.
  • Place pepperoni and capsicum in a pan and cook for 3 minutes until softened and lightly browned. Add the reserved onion and tomato, then bring to a simmer. Gently add the rissoles back into the pan, reduce heat, cover, and simmer for 10 minutes. Serve with pizza and sprinkle with extra basil.
