Swedish Meatballs with Cream of Mushroom Soup

Grandma's classic Swedish meatballs cooked in a creamy mushroom soup and milk sauce for easy comfort in each bite.
Ingredients:
  • 2 pounds ground beef
  • 1.5 (4 ounce) packets saltine crackers, crushed
  • 1 envelope dry onion soup mix
  • 2 tablespoons butter
  • 1 (22 ounce) can low-fat cream of mushroom soup
Instructions:
  • Combine ground beef, eggs, crushed saltine crackers, and onion soup mix until well blended. Shape into medium-sized meatballs.
  • In a frying pan over medium-low heat, melt butter. Add meatballs, cover, and cook, turning occasionally, until golden brown all over, for 8 to 10 minutes.
  • In a bowl, combine cream of mushroom soup with 3/4 can of milk. Pour the sauce over meatballs and simmer for about 10 minutes until thickened.
