Ingredients:
  • 0.5 red bell pepper, diced
  • 0.5 yellow bell pepper, diced
  • 0.75 teaspoon butter, divided
  • 8 tomatoes, peeled and sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon white sugar
  • 0.25 teaspoon ground cloves
  • 1.5 teaspoons dried oregano
  • 1.5 teaspoons dried basil
Instructions:
  • In a large pot, sizzle red and yellow bell peppers in 1/4 teaspoon of butter until slightly charred. Stir in tomatoes, onion, garlic, and chicken broth. Season with salt, sugar, cloves, oregano, and basil. Bring to a boil and simmer for 20 minutes until tomatoes are soft.
  • Combine milk and cornstarch in a small saucepan, whisking until smooth. Heat over medium heat and stir in the remaining butter. Cook until thickened, then fold into the pot with vegetables.
  • Separate half of the vegetables from the soup and puree in a blender until smooth. Return the puree to the pot, bring to a boil, then simmer on low for 5 minutes. Let the soup rest for about 5 minutes before serving.
