Sweet Potato and Brandy Soup

Cozy sweet potato soup with allspice and brandy, either chunky or creamy. Perfect for crisp fall nights.
Ingredients:
  • salt and pepper to taste
  • 3 large sweet potatoes
  • 0.5 cup chopped Vidalia onion
  • 2 tablespoons white wine
  • 0.25 cup red wine
  • 1 tablespoon brandy
  • 2 cubes chicken bouillon
  • 2 cups water
  • 0.5 tablespoon allspice
Instructions:
  • 1. Boil a pot of water until bubbling. Add sweet potatoes and cook for about 15 minutes until tender but slightly firm. Drain, cool, peel, and mash the sweet potatoes. Set aside.
  • Cook onions in olive oil until translucent in a skillet over medium high heat. Pour in white wine, red wine, and brandy, and simmer for 5 minutes. Mix in mashed sweet potatoes. Dissolve bouillon cubes in water and pour into the soup along with allspice. Simmer for another 10 minutes, stirring occasionally. Season with salt and pepper to taste. Serve hot.
