Sweet and sour braised kale

"Enhanced kale with sweet and sour flavors, perfect as a side dish with roast pork or grilled haloumi."
Ingredients:
  • 60ml (1/4 cup) extra virgin olive oil
  • 2 small red onions, thinly sliced
  • 60ml (1/4 cup) white wine
  • 185ml (3/4 cup) white wine vinegar
  • 40g caster sugar
  • 1 bunch kale (about 500g), chopped, stalks and all, into 2.5cm pieces
  • 60.00 ml currants
Instructions:
  • - In a large saucepan over medium-high heat, sauté the onion in olive oil until softened and slightly caramelized, about 3-4 minutes. - Add white wine, vinegar, sugar, and 1/4 cup (60ml) water. Bring to a boil, then reduce heat to medium and simmer for 7-8 minutes until the liquid reduces by half.
  • In a pan, combine kale and currants. Pour in 1-2 tablespoons of water, cover with a lid, and cook for 2-3 minutes until the kale wilts. Uncover, stir occasionally, and cook for another 5 minutes. Serve immediately on a platter.
