Quick, make-ahead potluck favorite with sweet-tart balance, ideal as a versatile side dish.
Ingredients:
  • 2 (15.5 oz) cans dark red kidney beans, drained and rinsed
  • 1/2 cup diagonally-sliced celery
  • 1/2 cup coarsely chopped red onion
  • 1/3 cup red wine vinegar
  • 3 tablespoons olive oil
  • 3 tablespoons white sugar, or to taste
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly-ground black pepper
Instructions:
  • In a large bowl, toss together kidney beans, celery, and red onion.
  • Combine red wine vinegar, olive oil, sugar, salt, and pepper in a bowl and whisk until well blended. Pour the dressing over the bean mixture and mix until fully combined.
  • Refrigerate, covered, for a minimum of 4 hours or overnight to allow the flavors to meld and intensify.
