Sweet & sour sauce

Ingredients:
  • 30ml vegetable oil
  • 1 brown onion, peeled, sliced
  • 1 carrot, peeled, sliced
  • 10.00 gm cornflour
  • 225g can pineapple pieces in natural juice (drain and reserve 4 tbsp of juice)
  • 60ml (1/4 cup) Italian White Wine Vinegar
  • 20ml (1 tbsp) soy sauce
  • 40.00 gm caster sugar
  • 41.60 gm tomato sauce
  • 200ml vegetable liquid stock
  • 1/2 red capsicum, seeds and core removed, cut into 1cm cubes
  • 1/2 green capsicum, seeds and core removed, cut into 1cm cubes
Instructions:
  • Heat oil in a saucepan until shimmering. Sauté onion and carrot over medium heat for 1-2 minutes. Combine cornflour with half the reserved can juices, then add to the pan. Stir in vinegar, soy sauce, sugar, tomato sauce, and stock. Bring to a boil and add pineapple pieces, remaining juice, and cornflour mixture. Cook until thickened, then add capsicum and cook for another 1-2 minutes. Serve with grilled or fried chicken or fish.
