Sweet chilli prawn stir-fry

Delicious gluten-free prawn stir fry, ideal for a quick midweek meal - ready in just 15 minutes.
Ingredients:
  • 18.40 gm vegetable oil
  • 400g raw Australian banana prawns, peeled, tails on
  • 1 garlic clove, crushed
  • 350g packet Brand Asian Crunchy Stir-Fry mix
  • 44.00 gm Brand Sweet Chilli Sauce
  • 12.20 gm gluten-free fish sauce
  • 42.00 gm lime juice
  • 2 x 250g packets Brand Jasmine Microwave Rice, heated
Instructions:
  • In a sizzling wok, heat half of the oil until shimmering. Add prawns and garlic, stir-fry for 2-3 mins until prawns are pink, then transfer to a plate.
  • In a wok, heat the remaining oil until sizzling. Stir-fry the vegetables until tender-crisp, about 3-4 minutes. Add prawns, sweet chili sauce, fish sauce, and lime juice. Serve with rice.
