Spicy corn and paneer subji - a flavorful Indian vegetable dish with onions, chiles, nuts, and cilantro.
Ingredients:
  • 1 tablespoon vegetable oil
  • 0.5 cup cashews
  • 2 green chile peppers, chopped
  • 1 large onion, chopped
  • 0.66666668653488 cup corn kernels
  • 0.5 cup paneer, cubed
  • 1 pinch salt to taste
  • 1 pinch white sugar
  • 1 cup chopped fresh cilantro
Instructions:
  • In a large skillet over medium-high heat, heat oil until shimmering. Add cashews and stir until fragrant, about 1 minute. Add chiles and onion, and cook until onion is translucent, about 5 minutes, being careful not to brown the onion.
  • Combine the corn and paneer with the onion mixture, then season with salt and sugar. Cook and stir for about 3 more minutes until heated through. Finish by stirring in the fresh cilantro before serving.
