Moist, tender, and flavorful low-fat cornbread that disappears quickly after baking.
Ingredients:
  • 1 cup fat-free (skim) milk
  • 2 tablespoons margarine, melted
  • 1/4 cup fat-free cholesterol-free egg product
  • 1 1/4 cups yellow, white or blue cornmeal
  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
Instructions:
  • Preheat oven to 400°F and generously grease a 9x1 1/2-inch round pan or an 8x8x2-inch square pan.
  • In a large bowl, combine milk, margarine, and egg product. Add remaining ingredients at once, stirring just until flour is moistened (batter will be lumpy). Transfer batter to the pan.
  • Bake until beautifully golden brown and a toothpick inserted in the center comes out clean, about 20 to 25 minutes.
