Country Fried Steaks with Sweet Onion Gravy

Tender cube steaks coated in spicy flour, pan-fried and simmered in rich onion gravy.
Ingredients:
  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1.25 teaspoons onion powder
  • 1.25 teaspoons garlic powder
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon cayenne pepper
  • 4 (4 ounce) beef cube steaks
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3 very large sweet onions (such as Vidalia®), thinly sliced
  • 2 cups beef stock
  • 1 cup milk
Instructions:
  • In a shallow bowl, combine flour, cornstarch, onion powder, garlic powder, salt, black pepper, and cayenne pepper. Set aside 1/3 cup of the mixture. Coat cube steaks in the remaining seasoned flour mixture until fully covered.
  • In a large skillet over medium heat, melt butter with olive oil until the foam subsides. Pan-fry the steaks until they are golden brown on each side, around 4 minutes. Avoid turning the steaks more than once. Transfer the steaks to a platter.
  • Add the onions to the skillet with the oil and butter, cooking over medium heat until translucent, about 5 to 7 minutes, stirring frequently. Sprinkle the flour mix over the onions and cook for an additional minute. Pour in the beef stock and milk, bringing to a boil while stirring until the gravy thickens. Scrape the pan to incorporate any flavorful bits. Return the steaks to the gravy, cover, reduce heat to low, and simmer for about 45 minutes until very tender, stirring occasionally.
