German sweet or savory rolls, Dampfnudel, perfect for dessert with vanilla-caramel sauce or as a savory meal.
Ingredients:
  • 3 cups all-purpose flour, or more as needed
  • 0.25 cup white sugar
  • 1.5 (.25 ounce) packages active dry yeast
  • 1 teaspoon salt
  • 1 cup warm milk
  • 2 eggs
  • 0.25 cup butter, softened
  • 3 tablespoons butter, or as needed
  • 0.25 cup white sugar, or as needed
  • 1 cup milk, or as needed
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 0.5 cup white sugar
  • 1 teaspoon brandy, or to taste
  • 1 teaspoon vanilla extract
  • 2 cups white sugar
  • 0.5 cup warm water, divided
  • 0.5 cup maple syrup
  • 0.5 cup heavy whipping cream
  • 1 tablespoon unsalted butter
  • 1 dash vanilla extract, or to taste
Instructions:
  • Mix together 3 cups flour, 1/4 cup white sugar, yeast, and salt in a food processor until combined. Pour in warm milk, eggs, and 1/4 cup softened butter; pulse until dough forms a ball. Transfer dough to a bowl, let it rise at room temperature for about 1 hour. Shape dough, cut into 8 circles, and let rise for 30 minutes before cooking.
  • In a heavy pot over medium heat, melt 3 tablespoons of butter until browned after cooking and stirring in 1/4 cup of sugar for about 5 minutes. Pour in 1 cup of milk, then arrange dough circles in the pot. Cook covered over low heat until the dough is cooked through, which takes about 10 to 15 minutes.
  • In a small saucepan, melt 2 tablespoons unsalted butter over medium heat. Stir in 2 tablespoons flour until mixture bubbles, for 1 to 2 minutes. Gradually add 1 cup milk, stirring until thickened for 3 to 5 minutes. Stir in 1/2 cup sugar, brandy, and 1 teaspoon vanilla extract until a smooth vanilla sauce forms, for 2 to 3 minutes.
  • In a saucepan over medium-low heat, dissolve 2 cups of sugar in 1/4 cup of warm water for about 5 minutes. Gradually stir in the rest of the water until the mixture is smooth, taking 2 to 4 minutes. Combine maple syrup, cream, 1 tablespoon of unsalted butter, and a dash of vanilla extract into the sugar mixture to create a thick caramel sauce in about 5 minutes.
  • Place the dampfnudel on a serving dish, generously drizzle with vanilla sauce, and finish with a decadent swirl of caramel sauce on top.
