Sweet pea orecchiette

Delightful orecchiette pasta with sweet peas and diced potatoes tossed in tangy pecorino and olive oil is a Southern Italian favorite.
Instructions:
  • Peel and dice the potatoes into 1cm cubes, slice the spring onions. Cook them in a non-stick frying pan with olive oil and boiling water until the potatoes are tender. Add peas for last 5 minutes and stir occasionally. Cook pasta according to package instructions, then mix it with cooked veggies, pecorino cheese, and pasta water. Season to taste, top with more pecorino and olive oil before serving.
