Ingredients:
  • 1 cup chopped yellow bell pepper
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (7 ounce) jar roasted red peppers, drained
  • 12 cherry tomatoes, halved
  • 2 tablespoons chopped fresh parsley
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon vegetarian Worcestershire sauce
  • 1 teaspoon white sugar
  • 1 teaspoon dried basil
  • 1 teaspoon chopped garlic
  • 0.5 head lettuce
Instructions:
  • Mix together the yellow pepper, beans, roasted red peppers, and tomatoes in a large bowl.
  • Combine fresh parsley, tangy vinegar, savory Worcestershire sauce, sweet sugar, fragrant basil, and flavorful garlic in a jar with a tight-fitting lid. Shake vigorously to mix. Drizzle the dressing over your veggies and gently toss. Allow the flavors to meld by letting it sit at room temperature for 30 minutes or chill in the refrigerator for 2 hours.
  • Place crisp and refreshing lettuce leaves on separate salad plates and generously top with the flavorful bean mixture.
