Ingredients:
  • 600g pork mince
  • 125.00 ml fresh breadcrumbs, made from day-old bread
  • 3 green onions, finely chopped
  • 4cm piece ginger, peeled, grated
  • 2 garlic cloves, crushed
  • 2 makrut lime leaves, finely shredded
  • 80.63 gm plum sauce
  • olive oil cooking spray
  • 250.00 ml coriander leaves
  • 82.50 ml mint leaves, torn
  • 1 red capsicum, deseeded, sliced
  • 2 avocados, peeled, deseeded, sliced crossways
  • 2 large vine-ripened tomatoes, cut into thin wedges
  • 21.00 gm lemon juice
Instructions:
  • Submerge skewers in refreshing cold water for 30 minutes.
  • Combine mince, breadcrumbs, onions, ginger, garlic, makrut lime leaves, and 2 tablespoons of plum sauce in a bowl. Mix thoroughly with clean, damp hands until evenly combined. Shape mixture into 24 balls.
  • Skewer 3 meatballs on each skewer and arrange them on a plate. Cover and chill in the refrigerator for 30 minutes.
  • Preheat a barbecue grill or chargrill on high heat. Once heated, adjust to medium heat. Spray meatballs with oil and cook skewers for 8 minutes, turning and basting with leftover plum sauce until meatballs are fully cooked.
  • In a bowl, combine coriander, mint, capsicum, avocado, and tomatoes. Drizzle lemon juice over the mixture and toss to combine. Serve with pork skewers.
