Tender pulled pork enchiladas with sweet green sauce.
Ingredients:
  • 1 (3 pound) boneless pork loin roast
  • water as needed
  • 1 pinch garlic salt
  • ground black pepper to taste
  • 2 (14 ounce) cans green enchilada sauce, divided
  • 0.5 cup brown sugar
  • 1 (15 ounce) package flour tortillas
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 0.25 cup chopped cilantro, or to taste
  • 0.5 cup shredded Monterey Jack cheese
Instructions:
  • Place the pork in a slow cooker, ensuring it is covered by water up to 2 inches. Season the pork generously with garlic salt and pepper.
  • Cook on High for 4 hours to develop rich flavors and tender textures.
  • Preheat the oven to 350°F (175°C).
  • Place the cooked pork in a bowl and use two forks to shred it. Combine one can of enchilada sauce and brown sugar with the shredded pork. Spread half of the remaining sauce in a 9x13-inch baking dish.
  • Place a generous amount of the savory pork mixture in the center of each tortilla. Sprinkle black beans and fresh cilantro on top. Gently roll the tortillas around the flavorful filling and place them in the baking dish with the seam side facing down. Pour the remaining half can of enchilada sauce over the tortillas and generously sprinkle Monterey Jack cheese on top. Cover the baking dish securely with aluminum foil.
  • Bake until the cheese is gooey and the sauce is bubbling, around 25 minutes in the preheated oven.
