Tender seasoned pork with sweet beets over fluffy rice.
Ingredients:
  • 1 cup water
  • 1 cup uncooked long-grain white rice
  • 2 tablespoons vegetable oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger root
  • 1.5 pounds pork tenderloin, cut into thin 1 1/2 inch strips
  • 2 tablespoons oyster sauce
  • 1 teaspoon salt
  • 3 (8.25 ounce) cans sliced canned beets, juice reserved
  • 1.5 cups sugar
Instructions:
  • Boil water in a saucepan, then add rice. Cover and simmer for 20 minutes.
  • In a medium saucepan over medium heat, heat oil and sauté garlic and ginger for 1 minute. Add pork, oyster sauce, and salt. Stir continuously for 10 minutes until pork is evenly browned.
  • Combine the beets, 2/3 cup reserved beet juice, and sugar into the pork mixture. Cook for 10 to 15 minutes until the beets are tender. Serve over cooked rice.
