Sweet potato, lentil & goat's cheese pizza

Whip up flavorful veggie pizzas the whole family will love with time-saving tricks.
Ingredients:
  • 500g sweet potato, peeled, cut into 1.5cm chunks
  • Olive oil cooking spray
  • Salt & freshly ground pepper
  • 4 wholemeal or white pita pockets
  • 181.50 gm red wine & garlic pasta sauce (see note)
  • 400g can lentils, drained, rinsed
  • 80g goat's cheese, crumbled
  • 40g fresh rocket leaves
  • Extra virgin olive oil, to drizzle
  • Balsamic vinegar, to drizzle
Instructions:
  • Preheat oven to 200°C. Arrange sweet potatoes on a greased baking tray. Drizzle with oil and sprinkle with salt and pepper. Roast for 40 minutes, flipping halfway through, until golden brown.
  • Grease a baking tray and lay out the pita pockets. Spread pasta sauce on the pita breads, ensuring to leave a 1-2cm border.
  • Sprinkle the lentils, sweet potato, and goat's cheese generously. Bake until crispy and golden, around 20 minutes. Finish by topping the pizzas with fresh rocket and a light drizzle of olive oil and balsamic vinegar before serving.
