Sweet potatoes, apples, and warm spices topped with a sweet pecan crumble, baked to perfection.
Ingredients:
  • 3 sweet potatoes, peeled and quartered
  • 0.5 cup firmly packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 2 large cooking apples - peeled, cored and cut into 1/4 inch rings
  • 0.25 cup all-purpose flour
  • 0.25 cup firmly packed brown sugar
  • 0.25 cup chopped pecans
Instructions:
  • In a large saucepan, cover sweet potatoes with water and bring to a boil. Cook for 25 minutes until tender but firm. Drain, cool, and slice into 1/4 inch pieces.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) while giving your 7x11 inch baking dish a light greasing for a non-stick finish.
  • Combine brown sugar, cinnamon, and nutmeg in a small bowl.
  • Arrange the sweet potatoes, brown sugar mixture, and apples in the baking dish.
  • Combine flour, brown sugar, butter, and pecans in a medium bowl, then generously sprinkle the mixture over the sweet potatoes.
  • Place in the oven and bake at the specified temperature for 30 minutes, or until golden brown.
