Sweet potato and chive damper

Indulge in savory sweet potato damper as a delightful side dish.
Ingredients:
  • Flour, for dusting
  • 300.00 gm self-raising flour
  • 1.20 gm salt
  • 60g butter, chopped
  • 250.00 ml mashed orange sweet potato (see Notes)
  • 193.13 gm milk, plus extra for brushing
  • 62.50 ml fresh chives, finely chopped
  • 62.50 ml fresh flat-leaf parsley leaves, finely chopped
  • Butter, to serve
Instructions:
  • Preheat your oven to 220C/200C fan-forced, and lightly flour a baking tray. In a bowl, mix self-raising flour and salt. Use your fingertips to blend the butter into the flour until it looks like fine breadcrumbs.
  • Combine mashed sweet potato, milk, chives, and parsley until a sticky dough forms. Add more milk if needed. Transfer dough onto a floured surface and knead until smooth. Shape into a 20cm round and place on a tray.
  • Brush the top with a touch more milk, then sprinkle with sea salt flakes and cracked black pepper. Score the top of the damper into 8 wedges using a sharp knife. Bake for 30 minutes or until golden and hollow when tapped. Let it stand for 5 minutes before serving warm or at room temperature with butter.
