Sweet potato hash

Serve with a fresh salad and top with poached eggs for an added touch.
Ingredients:
  • 500 g sweet potatoes
  • 500 g Maris Piper potatoes
  • 2 red onions
  • olive oil
  • ½ a bunch of fresh thyme
  • 1 fresh red chilli (optional)
Instructions:
  • Peel the sweet potatoes and Maris Pipers, then chop into 2cm chunks. Boil in salted water for 5 minutes, drain, and let them dry. Slice the onions. Heat 1 tablespoon of oil in a large pan over medium heat, add onions and cook for 5 minutes until softened. Add thyme leaves, black pepper, and all the potatoes. Cook for 15 to 20 mins until crispy, flipping occasionally. Slice the chili and sprinkle over the hash. Serve immediately.
