Sweet Sierra Truffles

I created decadent Sierra wine truffles for a wine business owner's event at The Pines winery, named after their daughter, to rave reviews.
Ingredients:
  • 6 cups semisweet chocolate chips
  • 2 (8 ounce) packages cream cheese, room temperature
  • 6 cups confectioners' sugar
  • 1 tablespoon sweet red wine
Instructions:
  • Melt semisweet chocolate in a heatproof bowl over simmering water. Reserve 1/2 cup of chocolate chips if decorating. Stir occasionally until smooth, then remove from heat.
  • In a large bowl, use an electric mixer to whip cream cheese until light and fluffy. Slowly add confectioners' sugar until well combined. Fold in melted chocolate and wine. Chill dough in the refrigerator for 1 hour until firm.
  • Roll the mixture into 3/4 inch balls and arrange on a wax paper-lined baking tray. Microwave the remaining chocolate chips until smooth, then drizzle over the truffles for decoration using a fork.
