Ingredients:
  • 80.00 ml sake
  • 84.00 gm soy sauce
  • 80.00 ml mirin
  • 20.00 ml palm sugar
  • 20.00 ml grated fresh ginger
  • 4 (about 130g each) tuna steaks
  • 200g packet green tea noodles (see Notes)
  • 1 tsp sesame oil
  • 12.00 gm toasted sesame seeds
  • Wasabi, to serve (see Notes)
Instructions:
  • In a ceramic dish, mix together soy sauce, mirin, sake, sugar, ginger, and garlic. Place the tuna steaks in the marinade and let sit for 30 minutes, turning halfway through.
  • Prepare the noodles according to the package instructions, then drain and rinse with cold water. Place the noodles in a bowl and mix with sesame oil to keep them from sticking.
  • Preheat a barbecue or chargrill plate until very hot. Place the tuna on the hot surface, keeping the marinade aside. Cook each side for 1 minute, then let it rest.
  • Heat the marinade in a pan over low heat for 2 minutes until warmed.
  • Drain the noodles in a colander, then rinse with boiling water. Put them back in the bowl and mix in half of the heated marinade.
  • Divide the noodles among plates, add the tuna on top, drizzle the remaining marinade, then sprinkle with sesame seeds and wasabi for a finishing touch.
