Indulge in a decadent sweet cherry pie using fresh, seasonal cherries from eastern Washington.
Ingredients:
  • 2 cups pitted fresh dark sweet cherries, such as Bing or Lambert
  • 0.33333334326744 cup bottled cherry juice
  • 0.25 teaspoon almond extract
  • 0.33333334326744 cup brown sugar
  • 0.33333334326744 cup white sugar
  • 0.25 cup all-purpose flour
  • 1 pastry for a double-crust 9-inch pie
  • 1 tablespoon butter, cut into small chunks
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • Combine cherries, cherry juice, almond extract, brown sugar, white sugar, and flour in a bowl until the sugar dissolves; let sit for 15 minutes while you make the pastry dough.
  • Prepare a flaky pastry crust in a 9-inch pie dish, add the cherry filling, and dot with small butter chunks. Place the second crust on top, seal by crimping the edges, and slice steam vents on the crust using a sharp knife.
  • Place in the preheated oven until the cherry filling bubbles and thickens, and the pie crust turns golden brown, about 35 to 40 minutes. Let it cool before serving.
