Spiced swordfish steaks with sweet mango guacamole.
Ingredients:
  • 3.75 gm ground cumin
  • 1 1/2 tsp ground coriander
  • 2.50 gm smoked paprika (pimenton) (see note)
  • 1/2 tsp cayenne pepper
  • 4 x 220g swordfish steaks
  • White corn chips (gluten-free), to serve
  • 2 ripe avocados, cut into 1cm cubes
  • 1 mango, cut into 1cm cubes
  • 1/2 red onion, thinly sliced
  • 2 garlic cloves, crushed
  • 1 long green chilli, seeds removed, finely chopped
  • 125.00 ml coriander leaves, torn
  • 60ml lime juice
Instructions:
  • Combine avocado, mango, onion, garlic, chili, coriander, and lime juice in a bowl. Season with sea salt and pepper, then mix well. Set aside.
  • Mix the spices with a pinch of salt and pepper in a shallow bowl. Coat the fish evenly in the spice mixture, shaking off any excess.
  • In a large frypan over medium-high heat, sizzle the olive oil. Cook the fish for 2 minutes on each side, in batches if needed, until it's golden brown on the outside and perfectly pink inside.
  • Present the swordfish accompanied by the fresh mango guacamole and crispy corn chips.
