Taco Lasagna

Delicious taco lasagna: corn tortillas layered with salsa, seasoned beef, sour cream, and melted Cheddar and Monterey Jack cheese.
Ingredients:
  • 2 pounds lean ground beef
  • 2 (1.25 ounce) packages taco seasoning mix
  • 1 tablespoon chili powder
  • 0.5 teaspoon cayenne pepper
  • 0.5 cup water
  • cooking spray
  • 18 (6 inch) corn tortillas
  • 1 (24 ounce) jar salsa
  • 1 cup sliced green onion
  • 1 (16 ounce) container sour cream
  • 1.5 cups shredded Cheddar cheese
  • 1.5 cups shredded Monterey Jack cheese
Instructions:
  • In a large, deep skillet, brown ground beef over medium-high heat, then drain any excess fat. Season with taco seasoning, garlic, chili powder, and cayenne pepper. Add water, reduce heat to low, and simmer for 10 minutes.
  • Preheat your oven to 375 degrees F (190 degrees C, and grease the bottom of a 9x13-inch baking dish while you wait.
  • Layer 6 tortillas in the baking dish. Spoon 1/3 of the salsa over the tortillas. Spread half of the meat mixture evenly. Sprinkle half of the green onions on top. Drizzle half of the sour cream randomly. Add 1/2 cup each of Cheddar and Monterey Jack cheese. Repeat layers. Finish with 6 tortillas, salsa, and remaining cheese.
  • Bake until the top is golden brown and the cheeses are melted throughout the layers, for 30 to 45 minutes in the preheated oven.
