Tender chuck roast cooked in taco seasoning, shredded and served as mini sliders topped with avocado, cheese, crema Mexicana, black olives, and jalapeños.
Ingredients:
  • 1 tablespoon unsalted butter
  • 1 tablespoon grapeseed oil
  • 1 (2 1/2 pound) chuck roast, or more to taste
  • 2 tablespoons taco seasoning mix, or more to taste
  • 1 cup salsa, divided
  • 4 (15 ounce) packages slider-size burger buns
  • 2 avocados, diced
  • 0.5 cup sliced black olives
  • 3 medium jalapeno peppers, sliced
  • 0.5 cup Mexican crema, or to taste
  • 1 (8 ounce) package shredded Mexican cheese blend, or to taste
Instructions:
  • Heat butter and grapeseed oil in a stockpot over medium-high heat until melted. Cut roast into 3 equal pieces and coat with taco seasoning. Sear the roast on all sides for 8 to 10 minutes.
  • Spread a luscious layer of 1/2 cup of salsa on the bottom of a slow cooker. Gently place the roast in the slow cooker and generously top it with the rest of the salsa.
  • Slow cook the meat until it is fork-tender for 8 hours on Low or 6 hours on High. Remove from the slow cooker and shred the beef using 2 forks.
  • Position the oven rack 6 inches from the heat source and preheat the broiler.
  • Toast slider buns under the broiler for 1 to 2 minutes until golden brown, being careful not to burn them.
  • Top each slider bun generously with 1/4 cup shredded beef, avocados, olives, jalapenos, crema, and cheese.
