Seared sea scallops with rich tarragon brown butter sauce - a delicious treat for tarragon lovers!
Ingredients:
  • 2 tablespoons olive oil
  • 5 tablespoons butter, divided
  • 1.5 pounds sea scallops, rinsed and drained
  • 1 teaspoon salt to taste
  • 0.25 teaspoon freshly ground black pepper
  • 0.5 cup dry white wine
  • 1 lemon, zested
  • 2 tablespoons chopped fresh tarragon
Instructions:
  • In a large skillet over medium heat, heat olive oil and butter. Season scallops with salt and pepper. Place half of the scallops in the skillet, ensuring not to crowd them, and cook until browned, about 2 to 3 minutes per side. Transfer cooked scallops to a plate. Repeat process with remaining scallops using the remaining olive oil and butter. Transfer all cooked scallops to the plate.
  • Carefully wipe the skillet clean and place it back on medium heat. Add the wine and simmer for 1 to 2 minutes until it reduces to about 2 tablespoons. Lower the heat and gradually whisk in the rest of the butter until it forms a velvety sauce. Season with salt, lemon zest, and tarragon, then generously pour the luxurious sauce over the scallops.
