Lemon vodka gelatin shots: Sweet lemon syrup infused with tangy vodka for a delicious adult indulgence.
Ingredients:
  • 4 cups water
  • 8 large lemons, cut into 8 wedges each
  • 3.5 cups white sugar
  • 8 (.25 ounce) packages unflavored gelatin
  • 4 cups lemon vodka
  • 1 tablespoon turbinado sugar
Instructions:
  • In a large saucepan over medium heat, combine water, lemon wedges, and white sugar. Simmer until the sugar is dissolved, gently mashing the lemons to extract their juice and oils.
  • Continue to gently cook and stir the lemon mixture for an additional 5 minutes. Then, remove the saucepan from the heat and let it cool slightly. Strain out the lemon pieces.
  • Add gelatin gracefully into saucepan.
  • Gently warm the syrup and gelatin mixture until the gelatin completely dissolves, which should take about 5 to 10 minutes.
  • Let the mixture cool for 15 minutes before stirring in the lemon vodka until well combined.
  • Transfer the mixture into a 9x13-inch baking pan and chill until firm, for a minimum of 6 hours.
  • Rinse a sharp knife under hot water. Cut the gelatin into cubes and sprinkle with turbinado sugar before serving.
