Zesty lemon bars baked in a pie plate, topped with whipped cream and fresh strawberries.
Ingredients:
  • 0.375 cup butter
  • 0.25 cup confectioners' sugar
  • 1 cup all-purpose flour
  • 3 eggs
  • 1 cup white sugar
  • 1 tablespoon grated lemon zest
  • 0.25 cup lemon juice
  • 3 tablespoons all-purpose flour
  • 2 tablespoons confectioners' sugar for dusting
Instructions:
  • Preheat your oven to 350°F (175°C) for a perfect bake.
  • Combine butter, 1/4 cup confectioners' sugar, and 1 cup flour in a food processor and pulse for 10 seconds until mixed. Alternatively, you can also blend the ingredients with a pastry blender. Press the dough evenly into a 9-inch round pie plate.
  • Bake until golden brown, about 12 to 15 minutes.
  • Mix together eggs, white sugar, fresh lemon zest, lemon juice, and 3 tablespoons of flour until the mixture is smooth; then pour it over the hot crust.
  • Continue baking until the top is firm for an extra 15 to 20 minutes. Allow it to cool down entirely in the baking dish. Sprinkle with confectioners' sugar and cut into 12 triangles.
