Quick and easy Tater Tot® breakfast casserole with eggs and gooey Cheddar cheese, ideal for a relaxed weekend morning.
Ingredients:
  • cooking spray
  • 0.5 pound breakfast sausage
  • 1 small onion, diced
  • 5 large eggs
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon ground black pepper
  • 1 (12 ounce) package shredded Cheddar cheese, divided
  • 1 (16 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 2-quart baking dish with cooking spray.
  • In a large skillet over medium-high heat, cook and stir the sausage and onion until the sausage is browned and crumbly, about 5 to 7 minutes. Drain and allow to cool.
  • Whisk together milk, eggs, onion powder, salt, garlic powder, and pepper in a bowl.
  • Evenly distribute the sausage mixture on the bottom of the baking dish. Pour the egg mixture on top, followed by a layer of half of the Cheddar cheese and all of the potato nuggets. Cover the dish with aluminum foil.
  • Bake in the preheated oven for 40 minutes. Uncover, sprinkle with the remaining cheese, and bake for an additional 20 minutes until cheese is melted. Let it stand for 5 minutes before serving.
