Taro root cooked in creamy coconut milk with a blend of sweet sugars for a delectable Thai treat.
Ingredients:
  • 1 pound raw taro root, peeled and cut into 1/2-inch cubes
  • 2.5 cups coconut milk
  • 0.75 cup white sugar
  • 0.25 cup palm sugar
  • 0.5 teaspoon salt
  • 1 cup unsweetened coconut cream
Instructions:
  • 1. In a saucepan, bring coconut milk to a boil, then lower the heat to a simmer. 2. Simmer taro root in the coconut milk until tender, about 15-20 minutes. 3. Add white sugar, palm sugar, and salt, stirring until completely dissolved. 4. Mix in coconut cream and heat through. 5. Serve in individual bowls.
