Flavorful chicken stewed in tomatoes, served with mixed veggies and rice.
Ingredients:
  • 3 skinless, boneless chicken breast halves
  • 1 tablespoon ground black pepper, or to taste
  • 3 tablespoons onion powder, or to taste
  • 1 (28 ounce) can chopped stewed tomatoes, 1/2 the liquid reserved
  • 1 (14 ounce) can chicken broth
  • 1 (10 ounce) package frozen mixed vegetables
Instructions:
  • In a skillet over medium heat, heat oil. Season both sides of chicken breasts with pepper and onion powder, then place them in the skillet. Brown each side for 2 minutes. Add tomatoes with their liquid and pour in broth. Cover the skillet and cook for 15 minutes on each side until chicken juices run clear.
  • While the chicken is cooking, combine frozen mixed vegetables and water in a pot. Add about 3/4 cup of liquid from the skillet into the pot. Bring it to a boil and cook for 5 minutes until the vegetables are tender. Drain the vegetables, then place the chicken breasts over them. Finish by drizzling the dish with the liquid from the skillet before serving.
