Tequila-glazed pineapple with spiced white chocolate cream

Indulgent cinnamon chocolate cream paired with boozy caramelized pineapple.
Ingredients:
  • 100g white chocolate, finely chopped
  • 300ml ctn thickened cream
  • 1/2 tsp vanilla bean paste
  • 0.63 gm ground cinnamon
  • 60g butter
  • 1 fresh pineapple, peeled, halved, cored, thinly sliced
  • 32.00 gm brown sugar
  • 125ml (1/2 cup) tequila
Instructions:
  • Melt the chocolate according to the packet instructions and allow it to cool for a bit.
  • Whip cream with an electric beater until soft peaks form in a bowl. Gently fold in chocolate, vanilla, and cinnamon until fully combined.
  • In a large non-stick frying pan over medium-high heat, melt a portion of the butter. Add a section of the pineapple and sprinkle with a portion of the sugar. Cook each side for 3 minutes until golden brown. Pour in a portion of the tequila and bring to a boil. Cook for 1 minute until the mixture thickens. Transfer to a plate and cover with foil to keep warm. Repeat the process in 2 more batches with the remaining butter, pineapple, sugar, and tequila.
  • Serve the chocolate cream alongside the neatly arranged pineapple on a serving platter.
