Quick and vibrant Southwest-inspired potluck dish ready in 30 minutes.
Ingredients:
  • 1 package (16 oz) penne pasta
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 1 medium red bell pepper, chopped (1 cup)
  • 8 oz Cheddar cheese, cut into 1/2-inch cubes (1 3/4 cups)
  • 3 medium green onions, chopped (3 tablespoons)
  • 1/2 cup chopped fresh cilantro
  • 1 bottle (9 oz) Old El Paso™ Medium Taco Sauce
  • 1/4 cup vegetable oil
  • 2 tablespoons lime juice
  • 1/2 to 1 teaspoon ground cumin
  • 1 cup nacho-flavored tortilla chips, coarsely crushed
Instructions:
  • Prepare the pasta according to package instructions. Once cooked, cool the pasta by rinsing with cold water and draining thoroughly.
  • Combine pasta, chiles, bell pepper, cheese, onions, and cilantro in a large bowl.
  • Combine taco sauce, oil, lime juice, and cumin in a small bowl. Pour over pasta mixture, gently toss to combine, then top with crushed tortilla chips before serving immediately.
