Marinate chicken, skewer, and grill for tasty Thai chicken satay. Serve with chopped nuts and irresistible Thai peanut sauce.
Ingredients:
  • 0.5 cup canned coconut milk
  • 1.5 teaspoons ground coriander
  • 1 teaspoon yellow curry powder
  • 1 teaspoon fish sauce
  • 0.5 teaspoon chili oil
  • 1 pound skinless, boneless chicken breast halves - cut into strips
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon chopped unsalted peanuts
  • 12 wooden skewers, soaked in water for 15 minutes
  • 1 cup prepared Thai peanut sauce
Instructions:
  • Combine coconut milk, ground coriander, curry powder, fish sauce, and chili oil in a medium bowl. Add chicken breast strips, mix well to ensure everything is coated. Refrigerate for a minimum of 30 minutes and a maximum of 2 hours before moving to the next step.
  • Preheat a sizzling hot outdoor grill. Skewer chicken strips, leaving behind the marinade.
  • Grill the chicken until fully cooked, approximately 2 to 3 minutes per side, depending on the thickness of the strips. Place the grilled chicken on a serving plate, and top it with fresh cilantro and chopped peanuts. Serve alongside a delicious peanut sauce for dipping.
