Thai drumsticks with crunchy noodle salad

Savor zesty Thai chicken drumsticks with a refreshing noodle salad.
Ingredients:
  • 137.50 gm sweet chilli sauce
  • 2 tsp ginger, finely grated
  • 2 garlic cloves, crushed
  • 21.00 gm lime juice
  • 1 Chicken Drumsticks Large Pack
  • 260g pkt Brand Asian Salad Kit
  • Lime wedges, to serve
Instructions:
  • Preheat your oven to 200C while setting up a rack on a baking tray lined with baking paper.
  • Mix together the sweet chilli sauce, ginger, garlic, and lime juice in a small jug. Place the chicken in a glass or ceramic dish and pour the sweet chilli mixture over it, making sure to coat the chicken evenly. Let it marinate for 15 minutes.
  • Place the chicken on the rack and bake for 35-40 mins, basting and turning the chicken halfway through, until cooked through.
  • Follow the instructions on the salad packet. Place it beautifully on a large platter, add the chicken on top, and serve with lime wedges.
