Thai-inspired garlic prawns with vibrant South-East Asian twist.
Ingredients:
  • 6 garlic cloves, roughly chopped
  • 2cm piece fresh ginger, peeled, roughly chopped
  • 2 eschalots, peeled, roughly chopped
  • 1 lemongrass stalk (white part only), roughly chopped
  • 1 long red chilli, roughly chopped
  • 115.00 gm rice bran oil
  • 1kg medium green king prawns, peeled, tails intact
  • 21.00 gm lime juice
  • 2 tsp grated palm sugar
  • Lime wedges, to serve
  • Fresh coriander leaves, to serve
Instructions:
  • Combine garlic, ginger, eschalot, lemongrass, and chili in a small food processor. Pulse until finely chopped.
  • In a large deep frying pan over medium-high heat, heat oil. Add garlic mixture and cook, stirring, for 2 minutes until fragrant. Next, add prawns and cook for 3 to 4 minutes until they are pink and fully cooked. Remove from heat, then add lime juice and sugar, tossing to combine.
  • Present prawns in a flavorful oil mixture alongside fresh lime wedges and a sprinkle of fragrant coriander leaves.
