Trendy chicken bone broth recipe rich in collagen, vitamins & minerals. Versatile & aromatic, perfect for health and culinary creations.
Ingredients:
  • 1.5kg chicken bones (mix of chicken carcasses, chicken nibbles and/or chicken necks)
  • 2 large carrots, trimmed, chopped
  • 3 celery sticks, chopped
  • 1 brown onion, rinsed, quartered (unpeeled)
  • 1 tsp black peppercorns
  • 1 ½ tbsp fresh lemon juice
  • 2 fresh or dried bay leaves
Instructions:
  • Preheat the oven to 200°C/180°C fan forced. Place chicken bones, carrot, celery, and onion on a large roasting tray. Roast for 30 minutes until golden brown.
  • Place the chicken and vegetables in a slow cooker. Pour in the peppercorns, lemon juice, bay leaves, and 3L (12 cups) water. Cook on low heat for 15 hours, making sure to skim off any scum that forms on the surface.
  • Set a strainer over a large bowl to drain broth, discarding solids. Cover the strainer with muslin and strain the broth a second time into another bowl for a clearer result. Divide the broth into jars, seal, and refrigerate. Enjoy chilled as a drink or use in soups and casseroles as a stock substitute.
