French onion cheesy pasta in a quick one-pot meal, ready in under an hour.
Ingredients:
  • 2 tablespoons butter
  • 2 large yellow onions, thinly sliced 1/4 inch thick
  • 3/4 teaspoon kosher salt, plus more to taste
  • 5 cloves garlic, chopped
  • 1 tablespoon fresh thyme leaves
  • 3/4 cup dry white wine
  • 4 cups low-sodium beef broth
  • 1 cup water
  • 2 bay leaves
  • 1 pound dried orecchiette pasta
  • 1/4 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 cup grated Gruyere or Swiss cheese (about 3.2 ounces), plus more for serving
  • Freshly ground pepper, to taste
Instructions:
  • To caramelize the onions, heat olive oil and butter in a Dutch oven or large skillet over medium-high heat. Add onions and salt. Cook for 10 minutes until softened and most liquid is released. Reduce heat to medium and sauté for another 15 to 25 minutes until deeply caramelized, stirring frequently to prevent burning.
  • Enhance the flavors: Toss in the garlic and fresh thyme, sauté until aromatic for 2 to 3 minutes. Pour in the white wine and use a wooden spoon to scrape up the flavorful bits at the bottom of the pot.
  • Prepare the pasta: Combine beef broth, water, and bay leaves in a pot and bring to a boil with the lid on. Cook the pasta uncovered in the mixture until al dente, approximately 10 minutes, stirring occasionally to prevent sticking and ensuring it stays mostly submerged in liquid.
  • Combine heavy cream, Worcestershire sauce, and cheese off heat: Once the pot is removed from heat, mix in the heavy cream, Worcestershire sauce, and grated cheese. Remember to discard the bay leaves and add salt and pepper to your liking. The sauce will thicken slightly as it cools. Sprinkle extra cheese on top before serving. Enjoy the dish?
