Easy-to-make banana bread using Thermomix, perfect for all ages with a hint of spice.
Ingredients:
  • 200g (4 small) bananas, peeled
  • 85g (2/3 cup) light olive oil
  • 125g (1/2 cup) milk
  • 130g (2/3 cup, lightly packed) light brown sugar
  • 3 eggs
  • 225g (1 1/2 cups) self-raising flour
  • 100g (2/3 cup) plain flour
  • 4.00 gm baking powder
  • 2.50 gm ground cinnamon
  • ½ tsp bicarbonate of soda
  • Maple syrup, to drizzle
  • Butter, to serve (optional)
Instructions:
  • Preheat your oven to 180C/160C fan forced. Grease and line an 11 x 21cm loaf pan with baking paper, leaving an overhang on the edges.
  • Add bananas to the mixing bowl of the Thermomix and pulse for 5 seconds at speed 6 until mashed.
  • Combine the oil, milk, and sugar in the mixing bowl and blend on medium speed for 10 seconds. Remember to scrape down the sides of the bowl for an even mixture.
  • Crack the eggs into the mixture and blend on medium speed for 10 seconds.
  • Combine the flour, baking powder, cinnamon, and bicarbonate of soda in the mixing bowl. Mix on speed 4 for 20 seconds.
  • Bake for 35 minutes, or until a skewer inserted into the center comes out clean. Let it sit in the pan for 5 minutes to cool slightly, then transfer it to a wire rack to cool completely.
  • Slice the dish for serving.
