This recipe uses canola oil for a delicious, plant-based alternative to traditional flour tortillas made with lard or shortening.
Ingredients:
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1.25 cups warm water, or more as needed
  • 0.25 cup canola oil
Instructions:
  • Combine the flour, baking powder, and salt in a large bowl.
  • In a separate bowl, blend together water and canola oil. Stir into the flour mixture using a fork until a dough ball forms, adding 1/4 cup water if the dough appears dry.
  • After kneading the dough for 3 to 4 minutes until smooth, shape it into 14 egg-size balls. Cover the bowl with a cotton towel and allow the dough to rest for 10 to 15 minutes.
  • Roll each dough ball into an 8-inch tortilla on a floured work surface.
  • Heat a dry cast iron griddle over medium-high heat. Cook each tortilla for about 1 minute on each side until browned spots develop. Transfer cooked tortillas to a plate and cover with a cotton towel to keep warm. Repeat the process with the remaining tortillas, stacking them under the towel.
