Three-cheese cauliflower bake

Savor versatile cauliflower florets in this delicious side dish.
Ingredients:
  • 950g cauliflower
  • 50g prosciutto
  • 20g butter
  • 40.00 ml plain flour
  • 342.48 gm milk
  • 50g mild blue cheese, chopped
  • 62.50 ml grated tasty cheese
  • 62.50 ml finely grated parmesan cheese
  • 187.50 ml fresh breadcrumbs
Instructions:
  • Preheat your oven to 200°C/180°C fan forced. Next, place the cauliflower in a microwave-safe dish and microwave on high for 6 minutes or until it is just tender. Then, transfer the cauliflower to a 6-cup capacity baking dish.
  • In a saucepan over medium heat, heat oil. Cook prosciutto, stirring occasionally, for about 3 minutes until golden. Transfer to a plate lined with paper towel. In the same pan, melt butter and stir in flour, cooking for 1 minute until bubbling. Gradually pour in milk, stirring until smooth. Bring to a boil, then reduce heat to low and simmer for 5 minutes until sauce thickens. Remove from heat and stir in blue cheese, tasty cheese, half the parmesan, and the cooked prosciutto. Season with pepper.
  • Cover cauliflower with cheese mixture, then combine remaining parmesan and breadcrumbs in a bowl. Sprinkle over cauliflower and bake for 20-25 minutes until golden. Serve.
