Thyme and garlic roasted vegetables

Elevate your Sunday roast with perfect roasted vegetables.
Ingredients:
  • 260g potato
  • 2 small zucchini, thickly sliced
  • 1 large red capsicum, thickly sliced
  • 1 large red onion, cut into wedges
  • 100g button mushrooms, halved
  • 36.40 gm olive oil
  • 40.00 ml fresh thyme leaves
Instructions:
  • Preheat the oven to 220C/200C fan-forced. Line a roasting pan with baking paper. Combine potato, zucchini, capsicum, onion, mushroom, oil, thyme, and garlic in a large snap-lock bag. Seal the bag and shake well to coat the ingredients.
  • Place the assortment of vegetables in the baking dish. Give them a good sprinkle of salt and pepper. Roast in the oven for about 40 minutes or until the potatoes are nice and tender. Enjoy alongside a delicious lamb roast.
